FYI- GREEN TEA
Green tea has gained popularity thanks in part to recent health publications. This tea is very high in antioxidants,
aka, tannins and polyphenols.
The superior quality green teas that we offer have been tested in an independent laboratory. Premium teas have a
much higher quantity and quality of antioxidants compared to mass marketed supermarket type teas. Yes, you do
get what you pay for!
Green tea is significantly lower in caffeine that Black tea.
The harvested leaves are immediately steamed and then hung on drying racks to wither. When they are limp, the
leaves are twisted to break down the veins and release the tasty enzymes.
Once again, the leaves are gently heated in a firing to reduce their moisture content. Some green teas are flash
fired while others are heated more slowly. Once dried properly, the leaves are graded and sorted. The finest are
hand rolled into ball shapes or twisted into long slender swirls. Much of this work is done by hand, but some has
surrendered to mechanization.
China still produces many of the finest green teas on both small and large estates. However, Japan seems to
have perfected the art of modernizing the process yet retaining excellent quality.
